Ingredients

  • 4 thin chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup chicken broth
  • 1/3 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 1/4 cup fresh parsley, chopped

Instructions

  • Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add two chicken breasts and cook for 3-4 minutes per side until golden brown. Remove and set aside. Repeat with the remaining chicken and oil.
  • In the same skillet, melt 2 tablespoons of butter. Add the chicken broth, lemon juice, and capers. Bring to a boil, scraping up any browned bits from the bottom of the pan.
  • Return the chicken to the skillet and simmer for 5 minutes, until the sauce has reduced slightly.
  • Remove from heat, add the remaining butter, and sprinkle with fresh parsley before serving.
