Ingredients
4 thin chicken breasts
Salt and pepper to taste
1/2 cup all-purpose flour
4tablespoons olive oil
4tablespoons butter
1/2 cup chicken broth
1/3cup fresh lemon juice
1/4cup capers, drained
1/4cup fresh parsley, chopped
Instructions
Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add two chicken breasts and cook for 3-4 minutes per side until golden brown. Remove and set aside. Repeat with the remaining chicken and oil.
In the same skillet, melt 2 tablespoons of butter. Add the chicken broth, lemon juice, and capers. Bring to a boil, scraping up any browned bits from the bottom of the pan.
Return the chicken to the skillet and simmer for 5 minutes, until the sauce has reduced slightly.
Remove from heat, add the remaining butter, and sprinkle with fresh parsley before serving.
