- 3 large ripe bananas, mashed
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup plain Greek yogurt
- 1/2 cup chopped walnuts (optional)
Preheat your oven to 350°F (180°C). Grease a 9x5-inch loaf pan and set aside.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate mixing bowl, use an electric mixer to cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, followed by the mashed bananas and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the Greek yogurt and chopped walnuts (if using).
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool on a wire rack for 10 minutes before transferring to a plate or serving dish.
