Ingredients

  • 3 large ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup plain Greek yogurt
  • 1/2 cup chopped walnuts (optional)

Instructions

  • Preheat your oven to 350°F (180°C). Grease a 9x5-inch loaf pan and set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate mixing bowl, use an electric mixer to cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the mashed bananas and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the Greek yogurt and chopped walnuts (if using).
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let cool on a wire rack for 10 minutes before transferring to a plate or serving dish.
