- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, cubed
- 1 can of kidney beans, drained and rinsed
- 1 can of chickpeas, drained and rinsed
- 1 can of diced tomatoes
- 6 cups vegetable broth
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cups chopped kale (added in the last 30 minutes of cooking)
Add all ingredients except kale to the slow cooker.
Cook on low for 6-8 hours or on high for 3-4 hours.
Add kale in the last 30 minutes of cooking.
Season with additional salt and pepper if needed.
