Ingredients

  • 1 onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 potatoes, cubed
  • 1 can of kidney beans, drained and rinsed
  • 1 can of chickpeas, drained and rinsed
  • 1 can of diced tomatoes
  • 6 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 cups chopped kale (added in the last 30 minutes of cooking)

Instructions

  • Add all ingredients except kale to the slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Add kale in the last 30 minutes of cooking.
  • Season with additional salt and pepper if needed.
