For the strawberry shortcake crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup heavy cream
- 2 cups sliced strawberries
For the cheesecake filling:
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare the strawberry shortcake crust by whisking together flour, sugar, baking powder, and salt. Add softened butter and mix until crumbly.
Press the mixture into a rectangle, approximately 1/4-inch thick.
Bake for 18-20 minutes or until lightly golden. Allow the crust to cool completely.
Prepare the cheesecake filling by beating cream cheese until smooth. Add granulated sugar, eggs, and vanilla extract, mixing until well combined.
Stir in sour cream and mix until smooth.
Spread the cheesecake filling over the cooled strawberry shortcake crust, leaving a 1-inch border.
Roll the cheesecake tightly, using the parchment paper to assist.
Slice into 1-inch thick rounds and serve.
